A selection of the Minutolo variety, from spur-pruned vines on calcareous-clayey soil. Harvested manually in small crates during the early morning hours in the beginning of October. The ripely picked grapes stay in contact with their skins for a couple of days, thus showing a distinctive aroma already in the pressing phase.
