Full expression of a vineyard planted in 1959 among contemporary olive trees on terra rossa (red earth) rich in minerals, clay and outcrop, generating a complex wine that diverges from fresh and spicy notes to an articolate austerity. Harvest takes place from mid-September in two separate crops, to obtain grapes with full polyphenolic ripeness. Fermentation from 12 to 18 days with partly de-stemmed and partly whole bunch grapes; ageing in concrete, barrel, glass and steel vats.
